    Instructions

    1. In a large bowl, add all potato cubes, olive oil, and spices and toss well until all the cubes are evenly covered.
    2. Evenly spread the potatoes on parchment-lined baking sheets.

Halfway through cooking, take the pans out and gently stir the potatoes before returning to the oven, switching which rack they were each on. At the 30-minute mark, start checking the potatoes for doneness, and be sure to stir them if you notice they are starting to stick to the pan.

    Hint: Toss the potatoes in the olive oil and spices directly on the baking sheets to save time at clean up!
