2poundsof red potatoes cut into ½ inch cubes
3tablespoonsolive oilor avocado oil
½tablespoonsalt
1teaspoongarlic powder
½teaspoonchilli powder
½teaspooncayenne
½teaspoonoregano
½teaspoonthyme
½teaspoonground pepper
½teaspoononion powder
Instructions
Preheat oven to 425° and line two baking sheets with parchment paper or silicone mats.
In a large bowl, add all potato cubes, olive oil, and spices and toss well until all the cubes are evenly covered.
Evenly spread the potatoes on the prepared baking sheets and bake at 425° for 30-45 minutes, until golden and crispy. Halfway through cooking, take the pans out and gently stir the potatoes before returning to the oven, switching which rack they were each on. At the 30-minute mark, start checking the potatoes for doneness, and be sure to stir them if you notice they are starting to stick to the pan.
